Little Box Kitchen Christmas Puddings
Traditional Christmas puddings, hand mixed in batches of 12 (I’m not strong enough to stir a bigger mix!), with a few tweaks of improvement. I’ve replaced suet with butter, for added richness and large shards of almond add a pleasing crunch in the melée of plump Turkish sultanas, Corinthian currants and Californian raisins.
Soft, moist breadcrumbs are freshly made: free range eggs come from less than 5 miles away and the flour hails from a Yorkshire miller. From further afield, I use sweet Valencian oranges for their juice and zest, to add to the lashings of Cognac, which, combined with mixed spice, cinnamon and nutmeg, gives a true taste of a British Christmas.
